HALT THE SALT Campaign by The Doctors TV

Can you say how much salt your body needs each day? In all my years I did not know. I found out yesterday that 1,050 mg of salt is all you need. A level teaspoon.

The Doctors TV Show has began to advertise the “Halt the Salt” campaign on 11/24/2010.

High salt intake causes high blood pressure. Your blood swells when too much sodium or salt is in it. It causes pressure on your blood vessels and breaks the capillaries. It makes your heart pump harder and enlarges the heart. It causes your health to develop COPD or breathing failure.

W. Rex Hawkins, MD published a book, Eat Right-Electrolyte (1). The DASH studies of 1997 and 2001 were to affirm the importance of dietary tools to control blood pressure through salt restriction and weight loss (p 22).  The DASH study was funded and performed by and through the National Institute of Heart, Lung and Blood. The 1997 study confirmed that blood pressure control requires a proper balance of dietary electrolytes. Fruits and vegetables balance provide an abundance of magnesium and potassium including calcium. Low fat dairy supplies abundant calcium (p 22).  The old standard salt was 3,000 mg a day. During the DASH study salt was restricted to 1,050 mg (p 42).  In the DASH report of 2001, a lower salt amount of 1,050mg per day showed a blood pressure reduction of 8.9 mm HG . That  reduction is as much as the blood pressure lowering drugs. (p 43).  The 1997 DASH report showed blood pressure fell with a diet that enhanced fruits/vegetable and low fat significantly reduce blood pressure (p 44).

Salt alone is not a  complete electrolyte. Your body needs sodium (salt), potassium, magnesium and calcium. Since the book was published vitamin D3 has become as important as calcium, because the two work together to ionize the calcium so it can be used in all the cells of the body (2). The small intestine is lined with Vitamin D receptors known as VDR’s. When the receptors are full (approx 5,000 units of Vit. D) then the intestine is capable of absorbing 2,000% more calcium (p 42).

I ask everyone who reads this writes to write or email the commercial companies and demands less salt in our prepared foods, then we can the save lives of ourselves, our families and our neighbors. Ask the commercial food makes to use spices instead of salt and MSG monosodiumglutamate ( more salt).

Pumpkin Health Benefits Are Year Round!

Pumpkin is a powerhouse super-food to add to your weekly diet. Dr. Steven Pratt, MD, says, “The pumpkin is one of the most nutritionally valuable food known to man.”

Pumpkins are a native food of America. It has some of the richest carotenoids known in foods. It is unique in that it contains both kinds in one source: Alpha and Beta carotenes.

Pumpkin contains Alpha-carotene-2.4 mg a day, Beta-carotene-6mg or more, extreme high fiber, Low calories, Vitamins A and C, Potassium, Magnesium, Calcium, Iron, Folate and Pantothenic Acid, Zinc, Selenium, Niacin and Vitamin E.  Pumpkin is an optimal health food that contains a very rich supply of carotenoids. They protect the plant from sun damage. Vitamin A carotenoids are beta-carotene and beta-cryptoxanthin, which allows the body to convert them to vitamin A. Plant sources do not contribute to toxic levels of vitamin A.

It is a fruit, not a vegetable. It’s a member of the gourd family. Pumpkin is a native American food. “Carotenoids protect us from free radicals, modulate our immune response, enhance cell to cell communication, and stimulate production of detoxifying enzymes. It is health boosting and disease fighting food.” said Dr. Pratt.

Canned pumpkin provides the benefits of nutritional food to be available year round.

It adds fiber, flavor and antioxidants to your health.  My friend adds pumpkin to chili. I haven’t tried it, but I think I will.

Pumpkin seeds are green and flat, which are full of nutrition for better health. The seeds contain manganese, magnesium, phosphorous, tryptophan, iron, copper, vitamin K, zinc, and protein.

Fiber for health is high in pumpkin. The USDA says in ½ cup of pumpkin is a measure of 1.3 grams of fiber. High fiber diets block the growth of bacteria that is harmful and cleans the body through waste elimination.

An article featuring men’s prostate stated that prostrate glands can be protected by pumpkin seed ingredients says, “Benign prostatic hypertrophy, or BPH, is a condition that commonly affects men 50 years and older in the United States. BPH involves enlargement of the prostate gland. One of the factors that contributes to BPH is over-stimulation of the prostate cells by testosterone and its conversion product, DHT (dihydrotestosterone). Components in pumpkin seed oil appear able to interrupt this triggering of prostate cell multiplication by testosterone and DHT, although the exact mechanism for this effect is still a matter of discussion.”

Fruit carotenoids: apricots fresh and dried, prunes, cantaloupe, mango, persimmons and watermelon.

Vegetable carotenoids: carrots, oranges, red bell peppers, yellow bell peppers, orange bell peppers, butternut squash, buttercup squash, collards greens, sweet potatoes, yams, red yams and spinach.

Kitchens for Men and Starting On Your Own!

Starting out on your own can be a chore and costly. So, lets get some ideas.

First, ask your Mom or your Grandma if she has some pieces she can give you. I started out this way. I still have the pieces Mom gave me as a blessing in my kitchen. I recommend stainless steel, because there is no toxicity from the metal of aluminum or Teflon flakes and gases from heating the pans.

You’ll need:

Stainless steel fry pan, 5 quart ss pan, a large kettle(SS) with lid, and a small ss quart pan with a lid, cookie sheet/pizza pan.  I’ve found lids for pans at Value Village.

Pot holders, dish towels, apron.

Pancake turner, kitchen paring knife and large meat cutting knife; a large ladle and strainer, can opener,  a rubber spatula; knives, forks and spoons, and tablespoons. Add a good kitchen scissors and a cutting board to slice fruits and vegetables.

Plates, cereal bowls, cups and glasses. Add two mixing bowls in glass or stainless steel.

I use glass quart jars for storing goods, because they are clean, produce no gasses like plastics, and keep bugs out.

Value village, church sales, estate sales are great places to get odds and ends for less money.

The one appliance I cannot live without is a Cuisanart or blender. I use it every meal. It’s fast, quick and takes all the chopping, grinding and prep time to seconds. Second, is a kitchen timer, electronic or wind up. Third choice is  a Mr. Coffee Coffee grinder. I use it tro grind millet, nuts, and whole grain flour in small quantities. Fourth choice would be a food  emuylsifier to make smoothies and green drinks made from whole organic foods.

My son says guys like muffins, so add a muffin tin in ss.

Garbage can is good for kitchen and bathroom. I use recycled large plastic buckets that were free.

Food storage in the refrigerator or on the counter is a vital part of keeping food. I have found “Debbie Meyer Green containers and bags” are a wonder at keeping your parishable fruits and vegetables from spoiling in 3 day or less. Food keeps so much longer. The design allows the gases to escape that continue to ripen the food, so they last longer. Crisp, clean, fresh vegetables and fruits with no mold saves your food budget.

Be sure and thank your Mom and Grandma for sharing kitchen tools.

Ask your Dad or Grandpa for tools for your new home. A hammer, some nails, pliers, a skill saw, an electric drill are nice to have. These can be added as you go along.

It’s October. The sun has been shining for the last month! So, our sultry dreary Summer was extended by God’s grace, giving us a bountiful harvest. We headed for the Vancouver Farmers Market in Vancouver, WA with our cameras and empty baskets to reap a visual and brimming fresh vegetables to fill our meals.

It rained that morning, but it stopped around 10 am. It was overcast and dry. A perfect light to take photos and walk in the open market. We took photos to show you the beauty that we can consume from vegetables that were fresh from the ground that morning.

The Swiss chard was robust, long and dark red and green. Colors filled the isles of the open market. Flowers were in bundles and wrapped to take home. Every booth had bounty and beauty for sale whose life was bursting with color and vitality.

A journey starts with an idea, planning and then you begin. My relationship with food has been a daily journey that started many years ago. I have raised a family, worked with my food allergies, cooked every day and read more books on food and health than I can count. New ideas, science, and health becomes more exact. Enzymes are discovered. DNA is a common household name. Man has been to the Moon. I heard on the news that America is installing electric stations to plug in your electric cars.  Hydrogen cars are invented in Greenland. They are off the oil grid.

In my lifetime, we no longer eat hydrogenated margarine or marbled fat meat. I no longer serve dessert at every meal. Homemade bread is now a treat, instead of an every Wednesday chore.

I left all the old ideas behind and keep reading about the newest food ideas to find what works to keep me healthy. I am amazed how fast my neighbors in the world are seeking better ways to improve their health.

My vision is to research and report to you what I am finding that has changed my life and could effect you. I am not a doctor. I am an investigative reporter with an English Degree. I suggest you ask your own doctor about your health.   My research is to help you think and ask questions. We eat every day. Food is the most powerful drug you will ever put in your mouth.
